I am reminded of the book written by Barbara Reed Stitt, called Food and Behavior, which speaks
to the consequences of eating a Standard American Diet (SAD.
Ms.
Stitt, now the co-owner of a bakery in Oconomowoc, Wisconsin, Natural Ovens, was a
probation officer in Cuyahoga Falls, Ohio when she discovered her own hypoglycemia.
Subsequent to her recovery, she began to have probationers tested for heavy metal poisoning and
food allergies.
If they proved allergic to anything, including the Big 4 of allergies, milk, wheat, corn, and
peanuts, it was written into the probation order that the probationer could not eat that food(s) or
they would be in violation of their order and go to jail.
As a result, she had the lowest recidivism rate of any P.
O.
in her office and made the front page of
the Wall Street Journal.
There were incredible acts of violence and long standing patterns of behavior which literally fell
by the wayside when the probationer quit eating the offending food.
So do we build new prisons, or eat better.
